To make rice kheer, boil the milk, add rice and keep stirring on a low flame. Cook until it’s soft and add sugar. Add nuts and cardamom once it achieves a thick consistency. Your Kheer is ready for serving.

3. Shrikhand

Shrikhand is a creamy, thick dessert that is made with hung curd, crushed almonds, cardamom and saffron. It comes in different flavours including mango, Kesar etc. Shrikhand and Puri is one of the best combinations amongst the Indian desserts.

Mix some saffron in 2-3 tablespoons of milk and let it infuse for a while. Then pour it over the hung curd and add sugar, elaichi powder and cardamom as per your taste. Mix the batter till it’s smooth, then serve.

4. Rabri

Famous in North India, this sweet thickened milk has layers of malai or cream in it and is flavoured with saffron and dry fruits.

Boil milk on medium heat, and keep stirring till it starts reducing. Then add sugar, saffron, cardamom and continue to stir gently. As the colour starts to turn yellow and the quantity reduces to half, turn off the flame. You’ll see the cream collected on the sides. Scrape it and mix it with the thickened milk. Then add almonds, pistachios etc. and serve.
